橄欖油的特殊風味與澀味主要來自於兩個橄欖多酚:羥基酪醇(Hydroxytyrosol)與 Oleuropein. 近來歐洲食品安全局(EFSA)橄欖油中的多酚確實對健康有益。以相當嚴謹的過程,在審視相當數量的研究文獻與資料後,EFSA 認為每天攝取 5 毫克的羥基酪醇(Hydroxytyrosol)與橄欖油中的其他延伸物(oleuropein & tyrosol)就有健康促進的作用。
橄欖多酚是什麼?
●橄欖多酚在血液中會形成保護作用,減少奇奇怪怪的物質產生,也保護血管受到阻塞,降低心血管疾病的危險。另外,如果有高血壓的困擾,橄欖多酚也可協助控制並降低血壓,讓持續用藥的高血壓病人可以逐漸減少用藥。
●橄欖多酚同時也可增加骨骼健康,防止骨質疏鬆症或流失的狀況。橄欖多酚原本就可增強樹木的強度,經過實驗,發現對於人體的骨骼也有相當的幫助。
●橄欖多酚也擔當了保護胃部健康的責任,減少胃潰瘍和胃炎發生的機率。若是胃部容易出問題的朋友,建議可以多多攝取。
當然,最好還是直接食用橄欖油,畢竟天然的東西較好!

Does Olive Oil Stabilize Blood Glucose?
Numerous clinical studies have concluded that olive oil can markedly lower blood glucose levels in diabetics, reports the “Natural Standard Herb & Supplement Reference: Evidence-Based Clinical Reviews.” Research has shown that diabetics can lower their blood sugar levels to such an extent that they require less synthetic insulin.
